Jessica's Blue Cheese Dip

Some people have very definite ideas about how life should be carried out, and my friend Jessica is one of those people. She recently adopted a retired racing greyhound, and invited several of us over for a sip and see for the dog! I love the idea. For those out of the loop of the Southern country club set, a sip and see is a fancy little party a few weeks to months after a baby is born so everyone can come ooh and ahh over it. You sip on punch and champagne, and see the baby, hence sip and see. So why shouldn't the child-free among us have a sip and see for our beautiful new dog additions?

It's kind of like that Sex and the City episode where Carrie has a bridal shower for herself and only asks for one gift from one person, to celebrate her singleness. Except this is to celebrate dogs, which should always be celebrated.

But other than the dog meeting, and the time with my best buddies, the greatest part of this was the blue cheese dip she made that everyone kept desperately cramming more of into their mouths. I was one of those people too, not gonna lie. It's fine, it's fine.

She was nice enough to share the recipe with me, and now I, with you. I made a few little tweaks, but one thing that should stay the same is buying the Trader Joe's rosemary and raisin crisps. Those crackers take this dip up a level.

Also next leveling the flavor is the Gorgonzola cheese I picked up. Gorgonzola is more robust and aromatic (read: stinky!) than Roquefort, another type of blue cheese, if you're into that kind of thing, which you should be. Despite my mold allergies, which does include the kind of mold that makes blue cheese blue, I would never give it up. You can go for the milder Roquefort if you feel you must, but think about the Gorgonzola. It's worth it.

Jessica's Blue Cheese Dip

Zesty blue cheese dip makes crackers and vegetables taste all the better.

Ingredients

  • 8 oz. sour cream
  • 8 oz. Neufatchel or cream cheese softened
  • 7 oz. blue cheese (I used Gorgonzola)
  • ½ cup chopped walnuts
  • 3 green onions chopped
  • ¼ tsp celery salt

Instructions

  • Mix the sour cream, cream cheese, and blue cheese together in a large bowl. 
  • Once thoroughly combined, add in the walnuts, green onion, and celery salt. Give the mix another few stirs to combine.
  • Cover and chill in the fridge for at least an hour. 
  • Serve chilled with rosemary and raisin crisps or other crackers. 

Now that you know that sip and sees for dogs are a thing, would you have one? Did you? We aren't going to be acquiring any new dogs for a while but I would totally be down for this many years in the future. When everyone else's kids are going to prom, I'll be having the most precious pastel-themed puppy sip and see with multiple outfit changes and bows for my bouncing baby doggo. Be on the lookout for your invite in the mail. Just kidding... email. The postal service will be dead by then.
