Goat Milk Frozen Yogurt (with Walnuts and Honey)

Before I had a Kindle, I would get stacks and stacks of books from the library and with cookbooks I'd photocopy a few of the recipes that I didn't get to try before I turned the book back in. And as a former administrative assistant who hated being one, I immediately forgot all sensibility about how to properly use one the moment I was done administrating for the last time, which is why I photocopied a page for a recipe that contained goat's milk frozen yogurt but have no idea what book it came from, since that part of it was off the edge of the photocopier.

That being said, I kept this recipe for the longest time because in 2013-ish (when I assume I had this book), goat's milk was not an easy find in Columbia. Earth Fare had it, but it was very expensive for a half gallon, nevermind having goat's milk yogurt. Alas, times have changed and Columbia is much more with it! Trader Joe's, my shining beacon of everything good with groceries, has reasonably priced goat's milk, and goat's milk yogurt! I snapped up a 32 ounce tub the other day and went on the hunt for this very recipe, excited to Make It Happen, after all of these years.

The recipe I photocopied used wine glazed blackberries atop it, but I wanted to go in a different direction that would let the goat's milk flavor shine. I used my favorite book, The Flavor Bible, to see what goes best with goat cheese and alas, honey and walnuts! The nuts give the frozen yogurt a nice crunch, and the honey sweetens up the goaty tang, making it the ultimate summer cool-down treat. Goat and get some of that yogurt from TJ's just so you can make this recipe NOW, not six years later.

Goat Milk Frozen Yogurt

Goat milk gives frozen yogurt an extra special tang, but it's enhanced and sweetened with honey and walnuts.

Ingredients

  • 16 oz plain goat milk yogurt
  • ½ cup sugar
  • ½ cup water
  • 1 tbsp light corn syrup
  • ¼ tsp lemon juice
  • tsp salt
  • honey
  • walnuts

Instructions

  • Bring the sugar and water to a boil. Whisk until sugar dissolves. Set aside to cool completely, or put in a container in the fridge to cool.
  • Once the simple syrup is cooled, mix the simple syrup, corn syrup, yogurt, lemon juice, and salt together in a large bowl until thoroughly combined. 
  • Pour into prepared ice cream maker and let it process per manufacturer's instructions until it's a frozen yogurt consistency.
  • Decant into plastic containers and freeze overnight.
  • To serve, top with a drizzle of honey and sprinkle of walnuts as desired.
