I have a friend that is so intense with his cocktail making that he has a suitcase full of the essentials who, when I posted on Facebook about my peach bellinis, quickly corrected my egregious error. Apparently peach is the default fruit of bellinis, so from his knowledge drop on me, I pass it to you. I won't call this recipe peach bellinis in the name of not being redundant twice. But there is a little extra somethin' in these bellinis, and that somethin' is rosewater.

So, bellinis! For reasons unknown to me I rarely think about them, except recently, because I can't stop blending up a quick batch of them even on a weeknight. And I rarely drink on weeknights because it makes me overly sleepy. But enough about my advancing age. Make these bellinis any night, or any time of day you want! Bellinis are technically brunch drinks so throw one in this very nonchalant Yeti cup and drink it at work at 11 a.m., if you want. Be your true self. But save that spreadsheet you're working on frequently, just to be on the safe side.

If you're wondering if this tastes soapy and overly floral due to the rose water, no it does not! Not at this quantity at least. In fact, you could not tell anyone about the rosewater and they wouldn't suspect it was there but would comment to you that these were the best bellinis they've had and they won't know why. The subtle floral gives the whole drink a posh vibe without being overly obvious as to what's within or what's bring on that fancy feeling. Just leave off the rosebud garnish if you don't want to give away your sekrits. It's kind of like in these chocolate rose madeleines — if no one mentioned roses, you might not catch it, but once you know, you can enjoy the faint hint of its presence.

Rosewater Bellinis

Rose and peach go together perfectly in rosewater bellinis for a cool summertime cocktail.

Ingredients

  • 3-4 ripe peaches peeled
  • 1 tbsp sugar
  • ½ tsp rosewater
  • 2 cups ice
  • 1 cup Prosecco
  • Optional garnishes: peach slices, dried rosebuds, mint

Instructions

  • Blend everything but the Prosecco in a blender. Add a little Prosecco if the mixture isn't blending easily.
  • Once blended, add the remainder of the Prosecco and pulse once or twice.
  • Pour into 4 waiting wine glasses, or regular cups if you aren't going full fancy. Garnish with peach slices, dried rosebuds, and mint as desired. 

Isn't the grass in these photos gorgeous? My neighbors recently installed new sod and to really celebrate it, I used the edge of it to take these photos.
