The condiment challenge is still going strong here and I've moved on from harissa recipes to key lime juice ones! Upon returning from Key West earlier this summer, I bought a bottle of Nellie & Joe's Key Lime Juice which is touted as the best key lime juice available. The best part is that it's sold in just about every grocery store. I was certain I'd make a key lime pie every week, but well, not so much. I did have Keebler Ready Crust mini graham cracker crusts just hanging out in my pantry though in case the mood were to strike, and it did on a random Monday evening. I just want to close my eyes and feel like I am in the tropics, with salty ocean breezes, chickens walking all over the place, and the inimitable feeling of having nothing in particular to have to do.
My usual key lime pie recipe calls for egg yolks but I was in a more no-bake kind of mood which led me to this fantastic three ingredient, no-bake key lime pie recipe from WFAE. Wouldn't you know, its proportions fit exactly into these six little pie crusts. Be ready to be amazed both in five minutes and five or so hours from now when they set.
Start on these early enough in the day and they'll be ready to enjoy by the end of it. Or you can make them the night before and spend all day anticipating tearing into these once you get home, because sometimes dessert first is the only way to go. If you won't eat these immediately, hold off on the whipped cream garnish until serving, otherwise it will deflate and make the crust soggy.
No-Bake Mini Key Lime Pies
Ingredients
- 1 package Keebler Ready Crust mini graham cracker crusts 6 mini crusts
- 1 14 oz. can sweetened condensed milk
- ½ cup Joe & Nellie’s key lime juice don’t fake it with plain lime juice
- Whipped cream topping optional
- Fresh lime zest for garnish
Instructions
- Remove crusts from packaging and set onto a flat plate or baking dish that can accommodate them all flat.
- Mix the condensed milk and lime juice together with a whisk until thick and thoroughly blended.
- Pour into the pie shells and refrigerate for several hours, or until set but preferably overnight.
- Garnish with whipped cream and lime zest as desired and serve.
Aren't these just the cutest? They are perfect single serving desserts, or if you want to be healthy, split them with someone after dinner. I'm not a big pie person but a good key lime pie will change my mind about that anytime. And it makes me want to go back to Key West for a much longer visit. Where else can you see this kind of craziness and wear shorts year round?!
