I share a lot of recipes on here, and this one almost feels like cheating, like it isn't a recipe because it's so easy. This recipe doesn't even actually contain any numbers. But these hummus stuffed mini peppers are delicious! It's even kid approved — I brought these to a neighbor's house and their three year-old went crazy for them. I don't often post recipes that are known for children's enjoyment of them so take this kind of edible gold while you can and make these hummus stuffed mini peppers.

The bags of multi color mini peppers that are popping up in grocery stores are amazing for healthier snacking. Anytime I see them, I grab some to take home. Between hummus, pimento cheese, or even ranch or blue cheese dressing, I will devour them. Bell peppers are high in vitamin C, the one that strengthens your immune system. Frankly, with this pollen assault, everyone's immune systems need a little bolstering in any form that we can get.

I recommend making these peppers as a snack, popping them in the fridge, and heading out in the beautiful spring sunshine for a long walk along a body of water. Then when you get back, you've got an immune system-building, high-protein, and cooled off treat waiting.

Hummus Stuffed Mini Peppers

Snacktime couldn't be easier or healthier with these hummus stuffed mini peppers stopped with feta cheese crumbles.

Ingredients

  • 1 bag sweet mini bell peppers
  • 1 tub hummus
  • 1 block feta cheese
  • fresh or dried parsley
  • salt

Instructions

  • Cut the mini peppers longways and remove the seeds.
  • Use a small spoon to fill each pepper half with hummus.
  • Sprinkle feta cheese over the hummus filled peppers.
  • Add chopped fresh parsley or dried parsley, then salt to taste.
  • These can be made up to a day in advance and kept in the refrigerator prior to eating. 

I've been trying harder lately to eat more vegetables, especially as snacks. These are perfect for getting in both vegetables and protein. And we can't forget the most important food group — cheese. As I am approaching my mid-30s (omg what why how) I have given up on the battle for svelteness and am just concentrating on maintaining healthiness and trying to keep my doctor from telling me I'm overweight. As a food blogger and writer, eating fun and probably too rich and too sugary foods is an occupational hazard. Add in being a full-time corporate computer sitter-atter and I'm basically screwed unless I work hard to put effort in on both the exercise and eating right fronts.

So here we are today, celebrating eating healthful snacks and also going on long walks along the beautiful riverwalk in Cayce, where I'm pretty sure there are miles of it I still haven't even seen.
