One of my least favorite things about the internet is when you pin something awesome and then you go to it years later and the website is gone. That's why I wanted to preserve this particular recipe on my website which is never going away. Not after all the work I've been putting into it lately!
This recipe is from House*Tweaking which well, might disappear anytime now. Consider this a new twist on seven layer dip and enjoy!
Greek Dip
It's like a Mexican 7 layer dip, but with Greek flavors!
Ingredients
- 8 oz. classic hummus
- 6 oz. plain Greek yogurt
- ½ tsp. pepper
- 1 tsp. lemon juice
- ½ cucumber seeded and chopped
- 2 roma tomatoes seeded and chopped
- 1 red pepper diced
- 3 scallions chopped
- 6 oz. feta cheese crumbled
- 1 tsp. extra virgin olive oil
Instructions
- Have all ingredients chopped, measured, and ready to go.
- Use a rubber spatula to spread the hummus in the bottom of an 8x8 baking dish.
- Mix the yogurt, lemon juice, and pepper together. Clean the spatula and use it to spread the yogurt mixture evenly on top of the hummus.
- Evenly spread the diced tomatoes and red bell pepper on top of the yogurt mixture.
- Evenly spread the scallions and diced cucumber over the tomatoes and peppers.
- Evenly distribute the crumbled feta over the vegetables.
- Drizzle olive oil over the whole pan. Add salt or pepper to taste, and let sit in the fridge for an hour minimum, for flavors to mingle. Use pita chips to eat.
