I love when misunderstandings turn into brilliant ideas. Sometimes those are the best things, that come out from under the surface of our brains and turn things we didn't even know we wanted into fully-formed thoughts. Take for instance, my friend's healthy attitude for lunch one day that I twisted into something wildly different.

Broccoli over fries. My mind turned it into a dish I just had to make. But first, I had to go on vacation, and keep the thought in the back of my mind for two weeks, THEN it was on. My mind swam with thoughts of thick, cheesy soup studded with bits of green, lushly poured over fat, golden steak fries that would get their width coated in the gooey deliciousness. It would be like a magical poutine but healthier of course, because broccoli! NOW it's on. Thanks Rachel!

I made the broccoli cheese soup in advance because I knew this was going to be best as an after work snack where I wouldn't want to do much more than heat up the fries. I adapted this copycat Panera recipe for the soup which turned out really well. I made the full amount of the recipe and ate most of it and reserved some for just this use.

And because it's summertime and I did not want to crank up the oven when the heat index hit three digits, I turned to a desperate college innovation that I brought with me into my adult life. I present to you, the aluminum foil pan made to fit the toaster oven. That's right, I threw these steak fries into my flimsy platter and let them take a 25 minute ride in the toaster oven, cranked to 450 degrees. And 25 minutes later, my kitchen stayed nice and cool, and I had hot fries. Who hasn't made themselves one of these at some point in time, right?

Broccoli Cheese Soup Fries

Cheesy broccoli adds a little greenery in your diet when you're also craving fries.

Ingredients

  • 1 bag steak fries
  • 2 cups broccoli cheese soup
  • 1 tbsp cheddar cheese grated
  • 2 scallions for garnish chopped
  • salt and pepper to taste

Instructions

  • Bake the fries according to package directions.
  • Heat up the broccoli cheese soup if needed in a microwave safe container.
  • Once the fries are done baking in the oven, assemble them on a large plate and pour the heated soup evenly over the fries.
  • Garnish with additional grated cheddar, scallions, salt and pepper as desired.
