Eight ladies, two cars, and one unexpected snow flurry sounds like the beginning to a bad math problem, but supposing you have a good combination of ladies, it is the recipe for a really great mountain weekend. Just this past weekend I enjoyed just such a weekend in Beech Mountain, North Carolina with a group of friends for a long weekend of sitting around, talking, reading, and lots of eating.
It snowed on the way up Friday, and once we got up (and up, and up and up) the mountain and to the house, it was great!
The weather was very very cold on Friday though, the high wasn't even to freezing. Saturday though, the temps were better enough to venture out for some playing in the snow, South Carolinian-style — maximizing our fun with the little amount of snow.
And of course, the tiniest snowman. Good thing we brought baby carrots!
We really didn't do a lot this weekend, it was about hanging out, talking over movies we all loved in the early 2000s, and lots of eating. One thing we did that I was very glad for was pairing up and providing the food/making a meal. This is the lunch spread Rebecca and I put together, a big charcuterie grazing board style lunch.
We also went full millennial with breakfast, so happy for this tasty avocado toast! The new Trader Joe's Everything But the Elote seasoning was fantastic on top of the avocado mash.
I think in total, each of us probably spent about $40 to feed eight people per meal, and we had a ton of food. Plus plenty of leftovers, which for me meant the broccoli, carrots, and leftover cheese turned into this fantastic broccoli cheese soup.
