WHAT A WEIRD MONTH and what a weird April roundup this will be.
This was my first full month of working from home, and I love it. LOVE IT. I'm going to have a very hard time going back and functioning well.
Beyond that, we've been very, very quarantined in our home. I've only gone out for groceries twice this whole time. I'm extremely excited for my next grocery store trip on May 1. It makes me wonder if I can and should buy two weeks of groceries at a time from here on out. Except that I love getting groceries so I probably won't do that once the world becomes more accessible again.
April Recipes
Of course, being at home all of the time means more cooking! I've been in the kitchen a lot with our grocery hauls, and have also been experimenting with some ingredients that I've been meaning to use but have not yet. It's been fun. Below is one such experiment, the blueberry lavender daiquri, based on the recipe above but with frozen blueberries. I think it might be the better of the two, but don't tell strawberries I said it.
One of my baking fails is this attempt at circus animal cookies using the IKEA woodland creature cookie cutters. I mathed wrong on the icing and it was thicc. They tasted amazing though, like Lofthouse sugar cookies. I'm going to make another attempt at these since the results should always taste good!
I also tried the dalgona coffee trend early on in the month, also using sprinkles because hey, why not? It turned out pretty decent. I enjoyed it but also I likely won't be doing it too frequently since it involves dirtying a mixing bowl and beater. I like my coffee to not be too involved of a process unless I'm paying someone else to create it.
Everything Else
The dogs have really been enjoying my being at home as well. This is how my newly acquired coworker spends most of her days, just to my left.
The other two move around the house. Cherry likes to hang out with my houseplants in the sun-filled front room because work bores her.
