Air Fryer Mixed Vegetables

Shout out to my Twitter friend Sherri for the air fryer mixed vegetables creation inspiration! I have had my air fryer lid for the Instant Pot for a year and haven't used it as much as I thought I would until recently. After a spell of using it for mozzarella sticks, and mini pizzas from Trader Joe's, I decided to get healthier with my air fryer lid use.

You can use a wide variety of vegetables in the air fryer, pretty much anything you'd stir fry in a pan. The key here is to make them an uniformly sized as possible so they all cook at the same or similar rate. You can't make a slice of bell pepper the same size as a floret of broccoli, but you can roughly eyeball it and more than likely succeed.

This recipe is great for the end of the week when you have a random assortment of things left over from the week. Perhaps it's half a bell pepper, a few broccoli florets, a semi full bag of snow peas, and a quarter of an onion. Toss it in! Other than the vegetable selection, if you decide to be more than random about it, your seasoning determines the direction your vegetables will take.

Stir Fry Seasonings

I have a few seasoning blends I like to keep around for vegetables. Beautiful Briny Sea has a Magic Unicorn salt that goes great on everything. They also have many other flavor combinations to fit anyone's taste, but the Magic Unicorn is fairly universal and standard in my kitchen. Trader Joe's seasoning blends are also a welcome addition to the rotation — including the Everything But the Leftovers seasoning from this autumn, the Citrus Garlic blend, and even the umami seasoning blend.

Air Fryer Mixed Vegetables

Use the air fryer to turn any assortment of mixed vegetables into a crispy, easy, and fast dinner side!

Ingredients

  • ½ white onion sliced into thin strips
  • 1 zucchini cut into half moons
  • 1 bell pepper cut into thin strips
  • baby carrots cut in half lengthwise
  • 1 cup broccoli florets
  • snow peas
  • 1 tablespoon olive oil
  • ½ teaspoon flavored salt

Instructions

  • Chop all of the vegetables and collect in a large mixing bowl. The vegetables can be any combination of the above, up to five cups depending on your air fryer's size. Drizzle with the tablespoon of oil and use a large spoon to stir so all of the vegetables are lightly coated.
  • Set the air fryer to 400 F, and preheat for three minutes.
  • Add the vegetables to the air fryer and set for 10 minutes. After 10 minutes, stir, and air fry for 3 more minutes if you want extra crispness or char on the vegetables.
  • Remove from the air fryer and place back in the mixing bowl. Add the flavored salt and stir to evenly distribute the salt. Serve immediately.
