Hot Pimento Cheese Dip with a Goldfish Cracker Crust
This recipe was born out of having Goldfish crackers and no desire to eat them straight up, but they are fantastic when crushed up and baked as a crust over a hot pimento cheese dip. When your cheese cravings need a little crunch, this is the way to go.

- 2 oz Neufatchel cheese softened
- ½ cup mayonnaise
- 8 oz sharp cheddar cheese grated
- 4 oz diced pimentos drained
- ¼ tsp Worcestershire sauce
- ¼ tsp garlic powder
- salt, pepper, and red pepper flakes to taste
- cooking spray
- ½ cup Goldfish crackers, finely crushed (or other cheese crackers or panko bread crumbs)
Turn the oven to 350 degrees F.
Mix the cheeses, mayo, pimentos, and seasonings in a bowl until thoroughly combined.
Spray your baking dish(es) with the cooking spray.
Spoon the pimento cheese mixture into the baking dish(es), and cover the top evenly with crushed cheese crackers or panko.
Put into the heated oven and bake for 20 minutes or until the edges begin to bubble. Multiple smaller baking dishes may take less time.
