Blender Tomato Soup
Go from no soup to flavorful tomato soup in less than 30 minutes with the help of a blender. This is a great way to use tons of summer tomatoes.

- ½ medium yellow onion roughly chopped
- 2-3 cloves garlic peeled
- 1 14.5 oz can of diced tomatoes, no salt
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 5-8 basil leaves
- salt and pepper to taste
Put all ingredients in a blender, and puree until smooth. You can also use an immersion blender.
Pour the contents of the blender into a medium sized pot and cook over medium heat, covered, for 15 minutes. Stir occasionally. Salt and pepper to taste, serve hot.
