- 1 bag sweet mini bell peppers
- 1 tub hummus
- 1 block feta cheese
- fresh or dried parsley
- salt
Cut the mini peppers longways and remove the seeds.
Use a small spoon to fill each pepper half with hummus.
Sprinkle feta cheese over the hummus filled peppers.
Add chopped fresh parsley or dried parsley, then salt to taste.
These can be made up to a day in advance and kept in the refrigerator prior to eating.
