Don’t play around here on this one. Go make these baked breaded eggplant rounds, go on.
Enjoy them in the most obvious manner, on top on spaghetti with red sauce as eggplant parmesan, then turn those bad boys into burgers. BURGERS.
Use cooking spray to lightly grease a frying pan, and heat to medium heat. Flip the eggplant until it’s brown on both sides then melt some cheese on top. Aged Swiss is delicious. Great way to use multiple kinds of my CSA bounty at once! (By the way, this is the bounty that I won from Pinckney’s Produce in their summer photo contest! It’s getting put to real good use!)
Then dress it like you would a regular burger. Oh oh oh my. Even Radar wants it.
