RILF Week 2

This week’s Recipe I’d Like to Fix (RILF) was not coming so easily today until I was at Sam’s Club and saw six prepackaged bell peppers in a warm red-orange-yellow rainbow and then it clicked right into place. Summer means bell peppers and cucumbers, and those items in season mean one thing: Mediterranean Pepper Salad as drooled over on at smitten kitchen.

I’ve been making this recipe for the past three summers, nearly since it first appeared on her site. It’s once of those recipes that has everything- the potential for great presentation, delicious taste, and it’s just vegetables and cheese. Oh, and it doesn’t involve any heating up at all, which is crucial on Southern days like today where the humidity is so thick that I’ve just given up on my hair. But who cares about hair when there are beautiful things like this to eat?
