Meal Planning, Back in Action

Remember when I used to meal plan? Yeah those were the good ole days, so it seemed right to bring it back. As part of trying to get back to the new normal, this institution should come back into play here more often. One future change will be that meal planning day will shift once I start getting my weekly CSA boxes from Picnkney’s Produce starting mid-April! I am really excited about this. Like, really. But for now, this week’s menu is full of delicious Trader Joe’s (TJ’s) items that I got from a jaunt to Charleston and Mount Pleasant Friday.

Credit where credit is due:

Israeli couscous tabouli (with the addition of cucumbers!). Taco dip (minus the nasty olives). Asian noodle salad (modified depending on the veggies on hand).

I have to say, I already made and am eating on the tabouli now- DELICIOUS. DAMN. I always thought I hated tabouli, but maybe what I hated was the weird grainy texture of the bulgar wheat or whatever it is that your everyday tabouli is made of. So glad I happened to see this segment on TV the last time I was actually at the gym on the ole treadmill.
